OUR WORK

our vineyards are located at the region of penedes. a privileged area of great beautysurrounded by forest, hills and dashed torrents, and safeguard by the magic montserrat mountain. a region influenced by the mediterranean sea making our vineyards enjoy mild winters and hot, dry summers

we work with rain fed agriculture, the soil has a loamy texture, with a perfect balance between sandy and clay terrain that helps draining when rains but also retains water during periods of drought. our vineyards distinguish for having low but high quality productions.

we specialized only in brut nature; xarel·lo, macabeu and parellada. we intervene as less as possible in the process to respect the natural enviroment and to guarantee the grape´s excellence, that is why we always harvest by hand. we let the vineyard express freely. the season, always different, it´s the one that sets the pace.

during the harvest, each grape is collected at its right moment of maduration, and we moved them as fast as possible to our winery so that they do not lose their characteristics, there we conduct a new quality check. the bottles will rest in the darness of the cellar for a minimum of 30 months, until they reach their unique personality. when the aging process achieves our point of excellence, the bottles are placed on the wine rack, where are daily revolved and tilt with slowness, until the lees are deposited into the bottle neck.

with the expertise acquire only thru experience, the wine master manually extracs the lees without interfering with the natural conditions on the cellar. with no exception, all the bottles are manually disgorge in a ritual marked by harmonic fizzyness.

our sparking wine develops deep and brigth, subtle and rich in nuances, an excellent companion for gastronomic experiences.
